Vermicelli with spicy minced pork (蚂蚁上树)
1】Main ingredient(主料):
vermicelli (粉丝)、minced meat(肉末)
2】Charge mixture(配料):
shallot(香葱)、water(水)
3】Flavoring(调味料):
ginger(蒜)、dark soy sauce(老抽)、thick broad-bean sauce(郫县豆瓣酱)、seed powder of Chinese prickly ash(花椒粉)
4】Cooking process(烹饪流程):
✔Boil the vermicelli for one minute with boiling water and then soak for about 10 minutes.(用开水将粉丝煮一分钟然后泡左右10分钟。)
✔Stir fry garlic, add minced meat and seed powder of Chinese prickly ash to stir fry.(将蒜炒香,加入肉末和花椒粉炒香。)
✔Then add thick broad-bean sauce,fry until the red oil appears.(然后加入豆瓣酱,直到炒出红油。)
✔Add 100ml water, add the vermicelli and stir fry evenly.. (加入100ml水,大火烧开后加入粉丝,翻炒均匀。)
✔Add the dark soy sauce to the mix, then sprinkle with the shallot. (加入老抽调色,然后撒上香葱末即可。)
